T.E.A.M. 2014: Bonus Week 1

This last week was the first bonus week for T.E.A.M. It was a lot of fun to be able to see and work with some of the kids from session one and from last summer. Here are some pictures from our activities that we did in the evenings. Enjoy!

Cousin Bonding Time

This last weekend I had the opportunity to go home with Andy and see him race Saturday night. We had a very eventful weekend. It all started with his car overheating on the way home. We ended up waiting in Osseo for almost 2 hours til Uncle Scott came and picked us up. Then that night we went to the races. I had so much fun watching the races and just hanging out in the pits with Andy, Uncle Scott, and Aunt Gina.

Ok, funny story:
On Sunday, Uncle Scott spoke in Rice Lake and for lunch, they came to my house. After lunch, Andy and I decided to go on a ride on the mule. We went all the way back around the field on the back 40 and then back up to the woodshed. We walked around by the barn and then we were going to go on another ride. Well, we went to start the mule and it wouldn't even turn over. So Andy pushed it over to the big shed and we put more gas in it. It still wouldn't start. Then Andy looked down under the shifter and said "Umm, where does the battery go in this thing?" I had no idea, but it sure looked like we were missing something. After a while, I went and got Dad and sure enough, we had lost the battery somewhere on our ride. So Dad and Andy jumped it and went and found the battery. It was all the way out on the farthest part of our field. Shortly after they got back Andy, Aunt Gina, and Uncle Scott took Irma and headed home.

This is one of the many memories that will not be quickly forgotten. I had a ton of fun hanging out with you Andy! Love you!

Shopping Trip With Friends

Today was so much fun! Brianna, Jocelyn, Kathryn, Amber, and I went to Eau Claire for the day to go shopping, get pedicures, eat, to hang out, and to celebrate Brianna and Kathryn's birthdays.

Mini Photo Shoot: Jennica

 This girl, I could tell you countless stories of her
 and I'm sure she could tell you countless stories of me. 
Ever since we met, 
after she changed her mind about me being a snobby handicapped girl that is, 
we have been best friends. 
We have laughed together, cried together,
 and schemed evil plots against our brothers together. 
A couple years ago, we decided to start a yearly tradition of doing a mini photo shoot.
As we were thinking of what to use for props, 
we instantly thought of our violins. 
We both love our violins dearly and call them our "babies". 
So, I hope you enjoy the pics from our mini photo shoot.

GF Scalloped Potatoes & Ham

1. Peel and cook 8 big potatoes.
2. Measure out: 
1/4 c sour cream
1/4 c butter
1/2 c milk
1/4 c shredded cheddar cheese 
(unless you are like this Wisconsin girl, then you put in 1/2 - 3/4 of a c)
3. Put your butter, sour cream, milk, cheese, and 1/2 of your potatoes in a bowl and mash til creamy.
 4. Cut up approximately 1 pound of ham. 
5. A pinch of: garlic powder, onion powder, salt, and pepper.
6. Put your ham, garlic powder, onion powder, salt, and pepper in with the potato mixture and mix til creamy.
7. Add the rest of your potatoes and mix. 
8. Put in a sprayed 9x13 pan and sprinkle with about 1 cup of shredded cheddar cheese.
9. Bake in a preheated 350* oven for 20 minutes or until the cheese is nicely browned. 
10. And wallah! You have a wonderfully yummy, easy homemade scalloped potatoes and ham supper!

Scalloped Potatoes and Ham                                                                                                                                      
8 potatoes, peeled and cut into ¼ in slices                            1 lb ham, diced
½ c milk                                                                              1 pinch garlic powder, or to taste
¼ c sour cream                                                                    1 pinch onion powder, or to taste
¼ c butter                                                                            1 pinch salt & pepper, or to taste
¼ c shred cheddar cheese, or to taste                                   ¼ c shred cheddar cheese

Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
Preheat oven to 350*.
Grease 9x13 in baking dish.
Transfer half of the cooked potatoes to a large bowl; add milk, sour cream, butter, and ¼ c cheddar cheese.
Mash with a potato masher or fork until creamy.
Stir ham, garlic powder, onion powder, salt, black pepper, and remaining potato slices into the mashed potato mixture until well mixed.
Pour ham and potato mixture into prepared dish; sprinkle remaining ¼ c cheddar cheese over mixture.
Bake in the preheated oven until cheese is melted, 20 to 30 minutes. Cool slightly before serving.
